TOMATO BASIL SOUP

INGREDIENTS:

  • 1       LG (280z) CAN OF SAN MARZANO TOMATOES
  • 1       MEDIUM ONION, CHOPPED
  • 4      GARLIC CLOVES, MINCED
  • 1-2   CUPS OF HEAVY CREAM
  • 1/2   CUPS OF PARMESAN
  • 1       TSP DRIED BASIL

*For thinner soup add more chicken stock.

DIRECTIONS:

Saute onion in olive oil in heavy pan (Dutch Oven or cast iron) on Med. High until onion begins to brown. Add minced garlic; saute 1 minute more. Add tomatoes; Cook down until thick & dark red around edge of pot & on bottom of pan. Decrease temp. to Low/Med-Low. Add chicken stock. Use emulsion blender to blend contents of pot until smooth. Add basil & let simmer for 2-3 minutes. Remove from heat, stir in cream & cheese. *Serve with Cheese Straws (Sweet Gourmet).
