Cherry Oat Bars Sweet Gourmet Style

Ingredients

1 cup of butter, cut into pieces

1 1/2 cups all-purpose flour

1 1/2 cups rolled oats (not instant)

1 cup brown sugar, packed

1 tsp baking powder

1/2 tsp salt

0 oz jar of New Canaan Farms Cherry Preserves (or your favorite cherry preserves)

2 cups fresh cherries, pitted and chopped

1 tablespoon all-purpose flour

Zest and juice of one lemon
Directions
Preheat your oven to 350°F (175°C) and line a 9x13-inch (23x33 cm) baking pan with parchment paper. Leave some overhang on the sides for easy removal.
In a mixing bowl, combine the cherry preserves, chopped fresh cherries, 1 tablespoon of flour, lemon zest, and lemon juice. Stir until the mixture is well combined and set it aside.
In a large mixing bowl, combine the 1 1/2 cups of flour, 1 1/2 cups of rolled oats, 1 cup of brown sugar, 1 tsp of baking powder, and 1/2 tsp of salt. Mix them together until well combined.
Add the pieces of butter to the dry mixture. Using a pastry cutter or your fingers, work the butter into the dry ingredients until it resembles coarse crumbs. You can also use a food processor for this step.
Take about 2/3 of the oat mixture and press it firmly into the bottom of the prepared baking pan. Ensure it's evenly distributed and pressed down well to form a solid base.
Pour the prepared cherry filling over the oat base layer in the pan. Spread it out evenly.
Sprinkle the remaining oat mixture evenly over the cherry filling. Gently press it down with the back of a spoon or your fingertips.
Place the pan in the preheated oven and bake for 35-40 minutes or until the top is golden brown and the cherry filling is bubbly around the edges.
Remove the pan from the oven and allow it to cool completely in the pan on a wire rack. Once cooled, use the parchment paper overhangs to lift the bars out of the pan.
Place the bars on a cutting board and use a sharp knife to cut them into squares or rectangles, as desired.
