Ingredients
1 bag (16 ounces) of pasta (rotini, penne, or bowtie)
1 small can of diced green chilis (4 ounces), drained
Directions
Cook the pasta: Fill a large pot with water and bring it to a boil over high heat. Add a generous amount of salt to the boiling water, then add the pasta. Cook according to the package instructions until the pasta is al dente. Drain the pasta and rinse it under cold water to stop the cooking process. Set aside.
Prepare the dressing: In a large mixing bowl, combine the mayonnaise, sour cream, and the contents of the Wind & Willows Sante Fe Cheeseball and Appetizer mix packet. Stir well until all the ingredients are thoroughly combined and the mixture is smooth and creamy.
Add the vegetables: To the dressing mixture, add the cherry tomatoes, diced green pepper, and drained green chilis. Mix well, ensuring that the vegetables are evenly coated with the dressing.
Combine the pasta and dressing: Add the cooked and cooled pasta to the bowl with the dressing and vegetables. Gently toss everything together until the pasta is well coated with the creamy dressing.
Chill and serve: Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour to allow the flavors to meld together. Before serving, give the pasta salad a quick stir and taste for seasoning. Adjust with salt and pepper if needed.
Garnish and serve: Just before serving, you can garnish the pasta salad with some fresh herbs like chopped parsley or cilantro, if desired. Serve the creamy pasta salad cold and enjoy!
Recipe Note
This pasta salad can be made ahead of time and refrigerated for up to 24 hours. If it seems a bit dry after refrigeration, you can add a tablespoon or two of mayonnaise and sour cream to moisten it before serving.
