1 package of vanilla wafers or cookies/crackers of your choice

2 cups whipped topping

1 jar of Traditional English Lemon Curd

1 Fresh lemon - zested
Directions
In a 9x9 inch or Loaf sized baking dish or a similar-sized container, create a bottom layer using vanilla wafers or your cookie/cracker of choice. Arrange them in a single layer, covering the entire bottom of the dish.
In a mixing bowl, add the whipped topping and lemon curd mix and then gently fold in half of the freshly grated lemon zest.
Spread half of the prepared Lemon Curd whipped topping mix over the cookie layer, ensuring it covers the wafers evenly. You can spread it gently using a spatula to create an even layer.
Repeat the process by adding another layer of vanilla wafers, followed by the remaining Lemon Curd whipped topping mix, and finish with another layer of the lemon zest-infused whipped topping.
To add a final touch of freshness and aroma, sprinkle the additional lemon zest over the top layer of whipped topping.
Cover the dessert with plastic wrap or a lid and place it in the freezer. Allow it to freeze for at least 4-6 hours or until firm.
When you're ready to serve, remove the Lemon Loaf Dessert from the freezer and let it sit at room temperature for a few minutes to soften slightly. Cut it into squares or scoop portions into serving dishes. The layers should be beautifully set, creating a delightful treat for everyone to enjoy.
